The warmth of the cookie will slightly melt the patty.įinish the cookie with a spoonful of chocolate ganache and let it run on the sides of the cookie. Just press it gently onto the top of the cookie, similar with a peanut butter blossom cookie. Bake in preheated oven for just 14 minutes and as soon as the cookies are baked, top them with another peppermint patty. Gently fold in the chopped peppermint patties and scoop the cookies on a baking sheet. Baking powder is added to give these soft cookies a little lift. Wherever we go, she wants mint chocolate chip ice-cream, mint filled cookies and from all the candies she received from the Easter bunny, she only ate the peppermint patties.
Lately, our daughter has been following his footsteps. Although he has not refused any other chocolate treats, I know a refreshing minty chocolaty treat is what makes him weak to his knees. Mint and chocolate has been my husband’s favorite combo for as long as I know him.
